Add the mint, lemon zest, lemon juice and olive oil. Season with salt and pepper. Then combine with a fork or masher. Next add the crumbled feta cheese and mix. STEP 2: PREPARE THE SOURDOUGH BREAD Toast the slices of sourdough bread, then rub with garlic cloves. Spoon over the peas, add more crumbled feta if desired and finish with a last drizzle of olive oil.
