Pancake Recipe - Dairy Free

Makes 10 1 cup of wholemeal flour 1 teaspoon of baking powder pinch of salt 2 tablespoons of brown sugar 1 teaspoon of vanilla extract (optional) 1 cup of dairy-free milk (I used rice milk here) 6 ripe apricots 2 tablespoons of honey/ brown sugar 1 teaspoon of vanilla (optional) Begin by whisking together all of the dry ingredients before adding into a separate bowl of the dairy-free milk. Be careful not to over-whisk as the best pancakes come from a lumpy batter! In a large oiled frying pan, turn up the heat to a medium-high before pouring in half ladel-fulls of the batter. Fry for 2 minutes or until you can see bubbles forming on the surface before expertly (!) flipping and frying the pancake for 1 more minute. I then make the apricot sauce by adding 6 ripe apricots (sliced) into a large frying pan with the brown sugar/ honey and 1 teaspoon of vanilla. Let these soften for only 5 minutes or so before serving over your pancakes with lots and lots of maple syrup!
