Fuji. We still do not get to see the Sakura, but I am sharing an idea for sweets that maybe nice to serve during Hanami party. If you do not have the picked sakura petals, please consider using dried strawberries or cherries and let me know how it all went! lol ★Recipe★ Ingredients: • 330ml of Milk • 200ml of Heavy Cream • 135g =4.5 oz. of Sugar (if you prefer not so sweet brulee, 100-115g instead) • 5 Egg Yolks • 7 Petals=10g =0.3 oz. of Cherry Petals picked in Salt and Plum Vinegar • Some Boiling water (about 750-1,000mL for the petals and to steam-bake the pudding in the oven). • 60g =2.1 oz. of Sugar Directions: 1. In a bowl, put egg yolks and gradually add sugar and whip until the mixture turns into a lighter color and blended well. 2. Prepare approx. 7 Sakura Petals (Picked); remove salt using a wet towel, place the petals in a cup, pour hot water and leave for 15 min. Drain excess water off petals using a sieve; Place the petals in food processor (add 100ml of Milk to grind the petals). 3. Put the rest of milk in the food processor, and transfer all mixture into a pot; add heavy cream into the pot (mix well); warm it up at low heat and turn off the heat before the boiling point. 4. Once 3 is cooled down a bit (at least 5-10 min), gradually add 3 into 1; mix using spatula (do not mix too much since we do not want to create too much bubbles in the mixture); leave the mixture for at least 15 min. so that the bubbles come to the surface of the liquid and it will make it easy to pour the mixture into dishes. 5. Place oven safe dishes on a pan and Pour 4 into the dishes. 6. Pre-heat the oven at 160C=320F. Place the baking pan in the oven. Pour hot water in the pan so that we can steam-bake the pudding. Bake for 35 minutes. If you do not have the burner to make the caramelized coating on top, you may want to bake for 40 minutes, since the surface of the pudding still gets  abit caramelized because of the sugar content in the mix. 7. Best to serve after chilling in the fridge and coat the sugar to make the caramelized sugar coating (using a burner) on top. The saltiness of the picked sakura petals actuall brings the sweetness of the brulee, and you can also enjoy the scent of sakura. What about you make these on the day before Hanami party with your friends? Good luck! P.S. If you can not find Picked Sakura Petals, please consider using: dried strawberries or cherries just to add the pink color in the brulee a little. In this case, please try adding the same 10g., and adjust as your preference! Good luck! (I would not recommend you add the fresh sakura petals, because I do not know what it will be like).
