**How to make Wife Cake (老婆餅)** 8-10個材料及份量: 水皮(water skin)-低筋粉(low protein flour)100g、固體菜油(veg.shortening)40g、水(wat­er)50g 油皮(oil skin)-低筋粉(low protein flour)80g、固體菜油(veg.shortening)60g 饀料材料及份量-糖冬瓜茸(candied winter melon)120g、糖(sugar)10g、加工糕粉(cooked rice powder、fried sweet rice flour or fried glutinous rice flour)40g、水(water)50g、菜油(veg. oil)5g。 做法: 水皮及油皮分別搓勻分成8-10等份,將水皮包入油皮(油皮在中央)壓平,捲起­再壓平,最後壓平包入饀料及做型,掃上蛋黃液,用小刀於餅面上(界)兩下,灑上芝蔴,­以180°c焗15-18分鐘。 PS:糖各瓜及加工糕粉於華人超級市塲有售。糖冬瓜畧清洗後剁茸。
