EASY VEGAN CAMPING FOOD | WHAT VEGAN FOOD TO TAKE CAMPING

I recently went camping for a couple of nights in Glenworth Valley, NSW and thought I'd cut up a quick video of the vegan food I packed with me to eat over the two days. I probably overpacked, but we were car camping so had plenty of room and in this case, it was better to over pack than under pack food! BREAKFAST: Home- made oatmeal mix I pre-proportioned into zip lock bags. These consisted of oats, slivered almonds, goji berries, currants, raisins, sunflower seeds, etc. Cooked in almond milk, then topped with fresh strawberries and banana, with a little bit of agave syrup as a sweetener on top. LUNCH/SNACKS: Lunch was pretty simple with Nuttelex, Promite (way better than Vegemite), and avocado sandwiches. Also packed a few cucumbers and carrots to snack on as well. Snacks included Corn Thins (topped with avocado), assorted dried fruit and nuts and BBQ corn kernels. DINNER: For dinner, I pre-washed and cut a bunch of vegetables (zucchini, red onion, mushrooms, red and yellow capsicum) and put them in a container. At the campsite, I then put them on bamboo skewers and grilled them over the BBQ. Store bought falafel also went on the BBQ to heat up. Once these were all cooked, I put them in a wrap/tortilla with hummus and babaganoush - so delicious! Also not pictured, a couple of cobs of corn and sweet potatoes wrapped in aluminium foil, which we cooked on the hot coals of the fire. DESSERT: Oreos, of course!
