Description

I brined the chicken using half and half of salt and sugar combination depending upon the pot size 1cup/1cup vs 0.5/0.5. Use 2 types of chicken rubs including: oil, kosher salt, rosemary OR oil, Lea & Perrins, and kosher salt. The halibut was an afterthought and I sprinkeled with salt and place in the PK Grill the last 2 hours. After all the smoking was done, I decided to put on sweet corn on the grill using the remaining heat of the coals. It was awesome and easy. The 2 chickens were smoked for approximately 5 hours with a rosemary wood smoke for the last hour. Keep it simple. Delicious!
