Chef Giuseppe Macerata, the executive chef of the CCE, shares a popular campus BBQ favorite: Grilled wings with Blue and Gold Sauce. Recipe below. Since 1844, Campus Dining has supplied campus with all the food served in dining halls, and campus eateries and restaurants. Today, accomplished chefs on staff include the gold medal winner in the 2016 National Association of College and University Food Services Midwest region challenge, the 2015 ACF Central Region Pastry Chef of the Year and the 2012 NACUFS National Culinary Challenge gold medalist. In 2014, Campus Dining streamlined operations and improved food quality and freshness with the for Culinary Excellence (CCE) located near White Field. The CCE houses catering, a cook and chill operation, prep for Grab-n-Go and the campus bakery which churns out 1.2 million cookies a year and 900 cakes for commencement alone.
