INGREDIENTS: Chili Taco Bites: PAM 4-5 large flour Tortillas 1 (15oz) Can of Wolf Brand Chili 1 Can of Ro*Tel 1/2 Cup Shredded Cheese 3-4 green onions (finely sliced) 1/2 cup Sour Cream Mini Cupcake Baking Pan 1. Pre-heat your oven to 425 degrees F. 2. Using a cookie cutter or round lid cut 3 in. circles out of the tortillas. 3. Pop the circles into the microwave for 10 seconds to make the tortillas more pliable. 4. Coat muffin pan with PAM, and press the tortilla circles into the cupcake holes. 5. Spoon a little chili into each tortilla cup. 6. Top each chili filled cup with a little Ro*Tel and shredded cheese. 7. Pop the tray into the oven for just 10-12 minutes, until the tortilla shells are crisp and the cheese is melted. 8. Sprinkle with chopped green onion. Serve with an array of customizable toppings: black olives, sliced jalapeño, cilantro, sour cream, etc. Meatball Brain Bites: PAM 1 pound lean ground beef 1 small onion, minced 1/2 cup breadcrumbs 1/3 cup grated Parmesan cheese, plus extra for sprinkling 2 eggs, lightly beaten 3 cloves of garlic, minced 1/2 tsp. oregano 2 tablespoons fresh basil, chopped 1/2 tsp. kosher salt 1/8 tsp. fresh black pepper 8 ounces mozzarella cheese ball, cut into 1/2 inch square pieces 1. Preheat the oven to 375 degrees F. 2. Lightly grease 2 baking sheets with PAM. 3. In a large mixing bowl, combine ground beef, onion, breadcrumbs, Parmesan cheese, eggs, garlic, oregano, basil, salt and pepper. Mix with a fork until combined. 4. Using a spoon or scoop, roll meat into balls, about 2 tablespoons each. 5. Using your thumb, press into the center to create an indent, place a piece of cheese in the center of the dough ball and then re-roll ball to cover the cheese. Feel free to use a little extra meat mixture if you need to cover the cheese. If desired, shape into a mini brain by creating an indent along the center. 6. Repeat with remaining meat and arrange on baking sheet. 7. Bake for 18 to 20 minutes, or until meatballs are cooked through. While meatballs are cooking make sauce: Sauce: 1 Tbsp. Olive oil 2 cloves garlic 1 tsp. Italian seasoning 1 can Hunts tomatoes, crushed 2 tablespoons fresh basil 1/2 tsp cornstarch 1 tsp. onion powder Salt, and pepper 1. Heat olive oil in large sauce pan over medium heat. 2. Add garlic, sauté 2 minutes. 3. Add tomatoes and seasonings. 4. Whisk in cornstarch. 5. Bring to a boil. 6. Cover, reduce heat to low, simmer 15 minutes.
